This German chocolate cake cookie is for all my chocolate lovers out there. It is so rich to so be aware of that before we proceed to the more nitty-gritty of this recipe.

It is made with a very similar base to my other Crumbl cookies, rich, chocolatey, and will stay chewy forever!

I’ve had a knack for chocolate cookies ever since I made the CRUMBL Chocolate Cake Cookies. So whenever Crumbl has a new chocolate cookie out, I literally race to the store to grab it, try it, and make it for you.

So enjoy this deliciously thick chocolate cookie with melted milk chocolate, then topped with a homemade small-batch coconut pecan frosting. It’s absolutely delicious!

Typically a German chocolate cake is a layered chocolate cake that’s extremely rich and topped with a coconut-pecan frosting.

It’s a thick pecan coconut frosting that’s made with sugar, heavy cream, vanilla, egg yolk, coconut, and pecans.

  • Butter- You can use either salted of unsalted butter for this recipe as long as it is softened.
  • Brown & granulated sugar – This cookie uses a mix of the sugars to really bring that cookie dough texture and flavor together.
  • Egg & egg yolk– The cookie dough needs a large egg at room temperature while the coconut pecan frosting will use that extra egg yolk.
  • Vanilla butter emulsion– This will give these cookies that Crumbl authentic flavor!
  • Flour– AP flour works great for these cookies.
  • Dutch cocoa powder– The dutch cocoa powder will give these cookies the perfect chocolate flavor.
  • Baking soda– This will give your cookie a little extra height
  • Milk chocolate chips – Make sure to use really good chocolate chips to make sure your cookies taste really good.
  • Oil– Use unflaored oils like vegetable oil, canola oil or coconut oil.
  • Heavy cream – The heavy cream is used to make the coconut pecan frosting.
  • Vanilla extract– The vanilla extract will add a little extra depth of flavor to the coconut frosting.
  • Sweetened coconut flakes– Use sweetened coconut flakes for this frosting.

Make the coconut pecan frosting

  1. Toast the coconut and pecans until golden brown.
  2. Whisk the brown sugar, heavy cream, vanilla extract, egg, and butter together. Bring to a boil and cook for 2-3 minutes.
  3. Mix in the toasted coconuts and pecans and let the mixture cool down for later.

Make the cookie base

  1. Cream the butter and sugars together until smooth.
  2. Add in the egg and the butter vanillla emulsion and mix.
  3. Mix in the dry ingredients just until the flour mixture disappears.
  4. Scoop out the co*kie dough, place it on a baking sheet, genrly flatten it with the palm of your hand and bake.
  5. Top the cookies with the melted milkchocolate and oil mixture and spread all around.

These cookies do freeze well. To freeze them place them on a parchement lined baking sheet and flash freeze for 1-2 hours or until solid. Transfer to an air-tight container making sure to separate each cookie layer with wax paper or parchment paper. They willlast for up to 2 months in the freezer.

Can you make catering mini German chocolate cake cookies?

Instead of making 8 large cookies, you can also make 16 smaller cookies. Now, instead of baking them for 10 minutes you can bake them for 8 minutes, let them cool down on the baking sheet for 10 minutes then transfer the mini cookies to a cooling rack.

Once the cookies are cooled down, you can decorate them as you could the larger cookies, chill, then enjoy!

Ingredients

  • ½ cup butter
  • ¾ cup brown sugar
  • 2 tablespoon granulated sugar
  • 1 large egg
  • 2 teaspoon vanilla extract
  • 1 & ¼ cup flour
  • ½ cup dutch processed cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Chocolate layer (optional, you can also just drizzle a little chocolate on top of the coconut frosting for a less rich cookie)

  • ¾ cup milk chocolate chips Use really good quality chocolate here.
  • 2 teaspoon vegetable oil or canola or coconut oil

German chocolate cake frosting

  • ¼ cup brown sugar
  • cup heavy whipping cream
  • 1 large egg yolk
  • 2 tablespoon butter melted
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • ¾ cup sweetened coconut flakes
  • ½ cup pecans

Instructions

Make the coconut pecan frosting

  • In a large pan over medium heat, toast the coconut and pecans. Stir occasionally so that they don't burn. This will take anywhere from 3-5 minutes

  • In a medium saucepan, whisk the brown sugar, heavy cream, egg yolk, butter, and vanilla extract over medium heat. Once the mixture is boiling, cook for about 1-2 minutes stirring from time to time. Mix in the toasted coconut and pecans.

  • Remove from the heat and transfer to a bowl. Let the frosting cool down so that it's a spreadable consistency.

Make the cookie base

  • Start by preheating the oven to 350F then line a baking sheet with parchment paper then set aisde.

  • Cream the butter, brown sugar, and granulated sugar together until creamy.

  • Mix in the egg, and vanilla extract until combined, then add in the flour, baking soda, cocoa powder, and salt and mix just until combined.

  • Scoop out 7 equally sized cookie dough balls, place them on the baking sheet and gently flatten to about 1 inch in thickness.

  • Bake the cookies in the preheated oven for 10-11 minutes then let cool on the baking sheet for another 20 minutes then transfer to a cooling rack.

  • Top each cookie with about ½-1 tablespoon of melted chocolate then top with some of the homemade coconut pecan frosting we made earlier and enjoy!
