Okay, I am a bit late to the Crumbl heath cake cookies party but I am here nonetheless. These cookies are absolute magic and now I can finally understand why everyone was asking me to remake them. I mean, you can never go wrong with a thick fudgy chocolate cookie that’s topped with caramel, light and fluffy whipped cream, and heath candy pieces for texture and sweetness.

With each bite you will be taken to your happy place, I promise. Honestly, if you like chocolate and caramel this is the recipe for you.

On a side note, I want to let you know that I had these cookies at room temperature (aka, as soon as I made them), then I tried them the next day right out of the fridge and the difference was huge. Making sure that you’re enjoying these cookies chilled will help elevate the experience so much more.

  • Butter- You can use either salted or unsalted butter for this recipe, just make sure that your butter is softened.
  • Brown & granulated sugar– The cookie base of this chocolate deliciousness is made possible using two types of sugar to get that texture just right.
  • Egg & egg yolk– Using an egg and an egg yolk increases the fat content of this cookie making it even more fugy and soft.
  • Heavy cream- The heavy cream is used to make the topping as well as make the cookie dough a bit more fudgy as well.
  • Vanilla extract– The vanilla extract will help add some depth of flavor to the cookie as well as enhance the whipped cream flavor too.
  • Flour– AP flour works great for this recipe.
  • Dutch processed cocoa powder– Making sure to use duthc processed cocoa powder will give this cookie that perfect chocolatey flavor.
  • Baking soda– The baking soda will help add extra height to our cookies.
  • Caramel sauce– The beauty of this recipe is that you can use whichever caramel you’d like. Homemde, store bought, or even dulce de leche will work here.

  1. Cream the butter and both sugars together.
  2. Mix in the egg, egg yolk, heavy cream, and vanilla tocombine.
  3. Sift in the flour, cocoa powder, baking soda, and salt, and mix to combine.
  4. Scoop out equaly sized cookie dough balls, place on a baking sheet and gently flatten.
  5. Bake int the preheated oven.
  6. Cool down the cookies fully before topping with some caramel, whipped cream, and Heath candies.

Make the homemade whipped cream

  1. Whip the cold heavy cream and powdered sugar together until stiff peaks form.
  2. Frost the cookies and enjoy. I used the Wilton 2A piping tip to create the swirls on top of the cookies.

Variations

When it comes to this heath cake cookie recipe, I tried to stick to the OG Crumbl copycat recipe but I definitely wanted to make some changes.

The main thing I wanted to play with was adding some Heath toffee bits to the cookie dough before scooping and baking it. If you want to try this, add ½ cup toffee bits to the cookie dough and gently fold to incorporate. This will add a little extra fun textural element to the cookies.

Since these cookies are supposed to be served chilled you can store them in an air-tight container at all times. Pull them out when you’re ready to serve and enjoy them. They will last for up to 4 days in the fridge.

Can I freeze these better than sex cookies?

These cookies do freeze well. To freeze them place them on a parchement lined baking sheet and flash freeze for 1-2 hours or until solid. Transfer to an air-tight container making sure to separate each cookie layer with wax paper or parchment paper. They will last for up to 2 months in the freezer.

How to make small catering sized Crumbl Heath cake cookies?

Instead of making 8 large cookies, you can also make 16 smaller cookies. Now, instead of baking them for 10 minutes you can bake them for 8 minutes, let them cool down on the baking sheet for 10 minutes then transfer the mini cookies to a cooling rack.

Once the cookies are cooled down, you can decorate them as you could the larger cookies, chill, then enjoy!

  • 1 stick butter softened
  • ¾ cup brown sugar
  • 2 tablespoon granulated sugar
  • 1 large egg at room temperature
  • 1 egg yolk
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract
  • 1 & ½ cup flour 192g
  • ½ cup dutch processed cocoa powder 50g
  • ½ teaspoon baking soda

Caramel + whipped cream topping

  • cup caramel sauce homemade or store bought* READ NOTES
  • ¾ cup whipped cream
  • cup powdered sugar
  • 1 teaspoon vanilla extract
  • cup Crushed up heath candies

Instructions

Make the chocolate cookies

  • Preheat the oven to 350 then line a baking sheet with parchment paper then set aside

  • Cream the cold cubed butter, brown sugar, granulated sugar together until light and creamy. Add in the egg, egg yolk, heavy cream, and vanilla extract, and mix until combined.

  • Sift in the flour, dutch processed cocoa powder, and baking soda and mix just until the dry mixture disappears.

  • Scoop out 8 equally sized cookie dough balls, place them on the prepared baking sheet and gently flatten to about ½ inch in thickness. Bake in the preheated oven for 8-9 minutes. Let the cookies cool on the baking sheet for 10 minutes before transferring to a cooling rack.

While the cookies are cooling make the chocolate frosting

  • In a stand mixer using a paddle attachment, whip the heavy cream, powdered sugar, and vanilla extract until light and fluffy. You will know your whipped cream is ready when it looks thick, this will take about 3-4 minutes of beating on medium to medium-high speed. Make sure not to overmix it though or you'll end up with butter and not whipped cream.

  • Top each cookie with some caramel sauce then frost with the sweet whipping cream. Top the cookies with the crushed-up heath candies. Enjoy!

  • I used the Wilton 2A tip to make the swirls.

Notes

Caramel notes-You can make a caramel sauce from scratch followingthis recipeor use store-bought dulce de leche or caramel dip (found in the fruit section by the apples)

If you decide to make the caramel from scratch start with it first so it has time to cool down a bit.

Dulce de leche- This option also works, just make sure not to use dulce de leche that’s too thick. We want it to be spreadable to add some oomph to this cookie recipe.
